View Full Version : Tinned Veg vs Fresh Veg

Is there really any difference? I like having 1/2 ratatouie (french veg) tin with salmon/chicken and rice and is quite nice I must say. It's certainly something I can't recreate with fresh veg anyway as I'm no good at cooking, but is there really any difference between tinned and fresh/chopped veg, as far as nutrition goes?

I suppose logic says that fresh is better. Just as it says organic better. Is there any proof to back this up? Depends who you ask but ultimately there is nothing conclusive. Tinned stuff has things added to it in order to preserve it. I would say just eat a combination of fresh with a bit of tinned stuff like ratatouie dude. I know what you mean-I like a tin of chopped tomatoes lol

canned anything is detrimental to an optimal diet..... there are significant 'leeching' of heavy metals from canned food. plus the overall nutrient density of fresh food compared to canned food is ten fold. as well as the issue of the man made chemicals that they have to add to canned food to keep it edible.
Bear in mind this is for an 'optimal'diet, canned veg is better than no veg. just not as good as the real thing.

Frozen veg on the other hand can be better than "fresh veg"

You've seen the (birdseye?) adverts on TV about locking in their freshness by freezing... this is correct.

Luke... get a steamer for your fresh veg as boiling it in water is bad (leaches all the goodness out).

Ratatouille...
Peel & slice 2 onions, heat in a pan with a glug of olive oil until soft (takes 5min max).
Add 2 cloves of crushed garlic & a couple of peppers chopped. (another 2-3mins)
Whack in some veg of your choice (courgette, auberjine, carrots...), keep it reasonably chunky so it dont turn to mush & a tin of tomatoes. Add some herbs if u like, oregano, basil, tomato puree. Salt & pepper... Simmer for 20-30mins with lid on.
Try some, add any more seasoning if required, cook for 15mins or so with lid off.

can also apply to fish as its frozen @ sea or on return whereas at a fishmoner or fresh fish counter its been on ice for days.

I like frozen, no chopping or pealing, just heat it in the microwave !

At which point the microwaves break down your food at a cellular level and rob it of a significant amount of it's nutrients. This is why microwaved food 'leaks' water.

Indeed they are, I've recently had one brought into my house under protest. Before I know it there'll be white bread in the kitchen and margarine in the fridge. :(

Probably not.

If you mean 'Do they destroy nutrients in food and possibly increase the risk of cancer,' probably yes.

I have heard that said before, but all the stuff I have read about it seems to be based on very bad science.

Pretty much all cooking methods reduce or alter the nutrient content of foods, does microwave cooking do this to a greater extent than other methods? I'd say no.

However I do agree they are "evil" in the sense that they encourage lazy/ bad cooking habits and are used to cook microwave meals. I never use a microwave.

To answer the original question... Fresh veg whenever possible.
