Can anyone recommend good shinpads with instep, which offer maximum protection but not too bulky!!!

We use the Windy ones they use on TUF - good for Thai sparring.
For MMA, I'd go for the Rogue pancrase-style ones (although the Hayabusa ones look identical) http://www.mmauniverse.com/products/SS207

I have a pair of the Sandee slimline shinpads, they're billed as "mma shinguards" on fightshop.com but they're good. They don't offer complete protection to your aparring partner; but you don't want that anyhow, something's gotta get through or they'll never toughen up; plus because they're slimline, they don't feel bulky

Nationman shin pads. It's used in many martial arts fighting. Slim and not bulky.
