It's probably been done before but it usually throws up some interesting stuff.
Some of mine
Keith Hackney vs Emmanuel Yarbrough from UFC 3.In fact almost every appearance Hackney made in the early days was worth seeing IMO.From pounding the giant Yarbrough's head in bare knuckle style to repeatedly whacking Joe Son in the gonads.And he gave Royce a decent fight too.
Tank Abbott.In those early UFC shows Tank was one of the most entertaining guys to watch.Obviously he was really just a brawler but it lead to some fun scraps like the fight with Frye and great KOs(Matua/Nelmark).
And there was his classic commentary "I had a bad dream I was being raped by Freddie Mercury"
Don Frye was a beast then.The beatings he put on Amoury Bitetti and Mark Hall were brutal.
Belfort was a breath of fresh air on these shows aswell.Coming in as a BJJ guy and blasting people standing.The fight against Tank was the first Belfort fight I saw and I thought for sure Tank would KO him.How wrong I was.
I also liked Pat Smith's style,just a vicious striker and a mean looking dude.The elbows he dropped on Scott Morris at UFC 2 were nasty.
Anyone know what happened to Pat Smith?
Early Pride Sakuraba was amazing aswell.Loved the fights with Carlos Newton and Renzo Gracie.And Igor Vovchanchyn and Gary Goodridge always delivered back then for great KO's and brawls.
What's everyone else's favourite memories.

Pat smith fought fairly recently(last year some time) ,i think it was against Butterbean in that yamma event.

Don Frye, Shogun, Wanderlei, Mark Kerr, Coleman, Couture, Gracie, Belfort, Abbott, Shamrock brothers, Little Evil, BJ shit the list would just go on and on, this may seem off topic to just list fighters but I have far to many from the list of fighters I just mentioned.

One that springs to mind is Keith Hackney vs Emmanuel Yarborough, UFC 3. A bit of a David vs Goliath situation there and Hackney pulls off a great strike that drops the big guy!

Mark Kerr / Colemans rise and fall.
Would love to see Kerr put on one final decent performance to remember him by!! He was the guy I wanted to be when I was a kid!
Loved the old Shamrock too, looked the part and was the part.
Kerr Shamrock?? I'd pay to see that.

TS mentioned one of mine, Sakuraba vs Newton, not only the fight but the end where a defeated Newton kneels and bows to Sakuraba. You could hear the collective gasps of the Japanese crowd that a foreigner was that humble, courteous and understood Japanese etiquette. Awesome moment.

Surprised no one mentioned it yet but my (still) favourite moment in mma, and the one which got me hooked was Gary Goodridge's first fight in the UFC where he gets the guy in a crucifix and elbows his head like a mad man.

Dan Severn in UFC IV.
Don Frye Vs Ken Shamrock - the build up was just great and it was the last time Ken could still go.
Frank Shamrock Vs Kevin Jackson - People forget that Jackson was a monster when Frank beat him.
Marco Ruas v Paul Varelans,with Ruas chopping away at the legs until the Giant fell.
Also Vitor Belfort v Jon Hess was enjoyable-Hess was a bully,and Vitor wiped him out in 12 seconds :D
Anything David v Goliath really.

Off the top of my head - when Bob Sapp pile-drivered Nog (and of course when Nog eventually got the armbar), Nino Schembri stopping Sakuraba with knees, any and all of Rampage's badass slams, but mostly the Arona one of course.
Funny that most people think of Rampage as a boxer these days, instead of the crazy slamming machine he was.

Was ringside for his last fight in Kansas and spoke to him afterwards. I dont think he has it in him anymore, such a shame, he was quality

Pat Smith is still very much an active fighter. He fights a few times a year.
Cheers for that and to Old man for the same.I looked him up and was surprised to see he is still going and fought Kevin Jordan in August 2009.
His record is 18-15 now which I was disappointed to find out because I always liked Pat's style.Still I see he blasted Brad Imes in 28 seconds in March so it's not all bad:D

Forgot about Ruas-Varelans.I liked UFC 8 which had the David vs Goliath theme and the brutal Goodridge vs Paul Herrera fight(or demolition) with the brutal elbows which ryanfoley mentioned.Don Frye debuted on the same show.
UFC 8 also had a pretty fun fight between Ken Shamrock and Kimo.
