i think it's a personal thing and there's no right or wrong answer, like most things in mma it's all dependent on the individual.
some prefer to go slow and walk through steps, especially when working technique, others prefer to learn by sparring full on at 80-90%.
it's whatever suits.
sparring at around 50% can help you work technique but then that doesn't prepare you for defending someones attacks coming at full speed.
sparring at full speed/power gives more sense of realism and can help you learn but then technique can often go out the window.
there's pro's and con's of both, it's whatever suits you, mix and matching will give you the best of both worlds.
