I believe today is actually the date the time machine was set to at the beginning of the first film before they were interupted by terrorists and accidentally went back to 1955.
when they finally DO go into the future it's to 2015

Doc sets the read out for 25/12/0000 the birth of christ then 4/7/17xx the signing of the declaration of independence and then 5/11/1955 which was the day he invented the flux capasitor and time travel.
Then the Lybians come and when Marty hits 88mph he goes back to 1955.
Also notice that Martys girlfriend is a different actress in No2.
Also notice that at the beginning they test the time machine in the car park of 'Twin Pines Mall' then when Marty is escaping the farmer who thinks he is an alien in 1955 he knocks over a small pine tree. When he goes back it is called 'Lone Pine Mall'
