2:40 - 3:50 - 4:30 are pretty nice although I didn't think 4:30 was still legal?.

Leg grabs as a counter or in combination with another technique are still legal in contest. So no problem with that.

I'm not sure I would consider leg graps quite the soul of judo but no, they can still be used.
